Blazin Curry Chicken

Honey and I were having another one of our Saturday Soiree's. Tonight's theme was a little eclectic. The atmosphere did not entirely match the cuisine but it was fierce none the less.

And here is the Blazin Curry Chicken. It was gorgeous and hot. I want to throw another shout out to my sister Lisa for the dish. She found the bowl/platter at a yard sale, and I love it.

I do not really have a recipe for this dish but here the highlights. I first cut up 3 pieces of boneless skinless chicken and tossed it with 1 tablespoon of flour. Brown and set aside. I then tossed into the skillet some garden fresh yellow squash, and red peppers. I added salt and pepper, some minced garlic. About 2 cloves. my mother in law had sent me some Hot curry powder. And it was HOT. Thank you Helene, it was delish. I am not sure that Honey loved it as much as I did. I only put in about a tablespoon of the curry powder. Maybe next time I will try to make it with a teaspoon, for Honey. Anyway, I threw the chicken back in, tossed in about a cup of coconut milk and let simmer to a golden bubbly. YUMMO.
